Given confidential information on the development of a new Tiki Bar at Disneyland.

 

October 2010:

Joint strategy session with Walt Disney Imagineers to discuss design/themes/interior design/recipes/etc

MarkeTeam hosted Safari with Disney F&B executives and Imagineers through LA to the most renowned Tiki bars in the area

Brad chosen as lead mixologist for the recipe development, including Classic and New Tiki recipes, signature “Gorilla Grog” recipe mix for multiple drinks and Zero Proof offerings.

 

Jan 2011:

Disney recipe/strategy session at MixLab.  Reviewed and tasted recipes, looked at glassware options and shared drink vessels, brainstormed drink names and ideas to tie them into the storyline and interactive atmosphere elements.

 

Brad researched the following:

Glassware recommendations, Custom Tiki Glass sources,  recipe ingredient sourcing, Tiki samples, Bar décor, Presentation décor

 

Menu Design:

Feb – assigned Disney imagineer to collaborate on the creative process

Discussed ‘secret’ drink idea.  Looked into heat reveal paper

Menu was determined to be a stylized journey through the jungle cruise map (Trader Sam is the character with the shrunken heads during the ride).

After reviewing historical tiki menus styles, we determined the drink imagery should be sketched.  We worked with WDI to get backgrounds of the Jungle Cruise to create the map.  Each drink is basically a stop along the journey.

Story received from WDI – became first page in menu.

Photo shoot for sketch direction and for recipe guide on what finished drinks should look like.

 

Menu Production:

Worked on several different menu cover looks/materials,  implementing the existing global beverage book style.
